Old school puddings. Cornflake tart.

Hey guys, last weeks school pudding which was chocolate concrete with pink custard was a huge hit, you can read that here if you missed it.

I decided to do cornflake tart this week and it didn't disappoint! The kids loved it and it tasted just like the one I used to devour in primary school! Its a simple recipe and great to make with the kiddies.

First you need to make the pastry.

you will need - Grease proof paper, a pastry dish and Some pastry beads.

You will also need - 8oz plain flour, 4oz butter, 3oz sugar and 1 egg.

Mix the butter and sugar together and then work in the flour and then add the egg. Need together and then place in a fridge for 15 minutes.

(you can also make this with the packet pastry or the ready roll if you didn't want to make your own.)

Take it out from the fridge, place onto a floured surface and roll the pastry out. Grease proof your dish and place the pastry into the dish and then add the pastry beads and bake for 10 minutes on gas mark 3 170C.

Whilst your pastry is cooking start on the filling.

For the filling you will need -

115g Syrup, 85g Cornflakes, 55g butter, 25g brown sugar, little pinch of salt and 100g of jam!

In a saucepan melt your butter, sugar, salt and syrup together. Once the sugar has dissolved gently fold in the cornflakes, making sure they are all covered in the syrup.

Remove the pastry from the oven and cover the base in jam then poor the mixture from the pan into the base, spread with a spoon, level off and bake for a further 5 minutes.

Once removed enjoy the tart hot with a creamy custard!

enjoy!

  11. Kerry, this is one pudding I've not heard of before. I thought I knew them all, but maybe this one was invented a bit later than the classics I lean toward. My husband is a huge corn flakes fan, so he'd no doubt love it. Me? I make a mean custard sauce and would happily eat a piece of cardboard with lashings of custard!
