What if I told you that you could make a delicious cheesecake from tofu!!? Crazy right?
I hate tofu so when my sister made this and told me I really wasn't in the rush for a slice!
OOoo...my days this is one of the most amazing cheesecakes I have tasted (and believe me I have tasted ALOT!) Its so soft and creamy, super chocolatey and sweet!
Here's the recipe:
First you will need:
One box of silken firm Tofu (drain the fluid off before you mix it otherwise it wont set like it should)
1 1/2 teaspoons of Co-co powder.
1 teaspoons of Vanilla extract
3 Tablespoons of Maple syrup.
60ml of milk (Rice, coconut, almond any dairy free)
1/2 cup of dairy free spread.
Pinch of salt.
1 Tablespoon of Coffee granules.
200g of dark chocolate.
15 Ginger biscuits. (I used ginger for mine but you can use any biscuit you like, Oreos, chocolate bourbons etc)
First crush the biscuits up into a crumb base, melt the butter in a pan then poor into the biscuit mixture and mix, Pour into a tin and press down. Pop into the fridge.
Next mix the tofu, salt, co-co, vanilla, syrup and 30ml of the milk (make sure you leave the other 30ml for the next part.)
When that's mixed heat your chocolate into a pan, add the coffee granules to the milk and then add that to the chocolate when melted.
Once melted, add the chocolate to the blender with the tofu mix and blend all together, Then take your base out of the fridge, pour the mixture over and then back in the fridge for another 2/3 hours.
That's it, pop the kettle on, feet up and enjoy!!
